Avocado and Tomato Purée with Salmon on Sourdough
Preparation time: 5 minutes
1 ripe avocado
handful cherry tomatoes
sprig of coriander or parsley
2 slices of smoked salmon
2 slices of sourdough bread
1 tbsp rapeseed oil
Place bread in toaster or under grill. Excavate contents of avocado into bowl, mix in other ingredients and season well with black pepper.
Add a little rapeseed oil to toast, pile with avocado mix and add salmon slices on top. Serve.
