Bruschetta Española

Ingredients

4 medium vine ripened tomatoes (I recommend mix of market red & yellow ones, delish!)
2 slices sourdough bread
Drizzle of Olive oil
Sea salt

Method

Place slices of sourdough in toaster. Slice tomatoes in half and grate over bowl to collecting juice. Discard skins (save and add to stews or another dish).

Remove toast, drizzle with olive oil, add tomato mixture, more oil and pinch sea salt to taste.

  • Tomatoes, with their high lycopene content (a red carotene) have been shown to be extremely protective against breast, colon, lung, skin, and prostate cancers. Lycopene helps prevent these diseases, and others, by neutralising harmful oxygen free radicals before they can do damage. (You can get up to 5 times more lycopene from tomato paste or juice, as the processing liberates more from the plans cells!)
  • Eating a lycopene source with oil, such as olive oil, can also improve its absorption. One reason why the Mediterranean diet has so many healthful properties!
