Roasted Pumpkin with Goats Cheese Roulade and Parsley

Ingredients

1 medium sized squash/pumpkin
200g goats cheese
1 tbsp turmeric
handful walnuts
1 tbsp honey
handful parsley
1 tbsp coconut oil

Method

Preheat oven to gas mark 6, 200 degrees. Cut pumpkin into rough chunks, throw in oven pan and massage in coconut oil, turmeric, season with salt and pepper. Place in oven and roast for approximately 30minutes.

Pummel walnuts into small pieces using tea towel and rolling pin or food processor. Spoon out a ball of soft cheese, roll into walnut pieces to create balls.

Remove pumpkin from oven, sprinkle with coriander and serve with balls and rocket salad.
