Banana Bread

This is such a simple, fail-proof recipe that’s yummy and comforting and best of all so easy to tweak. I personally like adding a good dash of Mount Gay rum and a handful of walnuts. But cinnamon and/or vanilla essence are also nice alternatives.

1/3 cup butter

1/2 cup sugar

1 beaten egg

2 cups plain flour

3 tsp baking powder

3 medium ripe bananas mashed up

Cream the butter and sugar together until light and fluffy, and then beat in the egg. Whisk into the mix the sifted flour, baking powder, and mashed banana.

Bake in a greased loaf tin at 180°C, for around an hour.
