Tomates Farcies with Salade Verte

Ingredients
4 large tomatoes
Stuffing
Handful of parsley
500g-sausage meat (or sausages with meat squeezed out)
2 garlic cloves diced
½ an onion finely chopped
Glug olive oil
Method
Mix together stuffing ingredients and set aside.
Cut the head off of the tomatoes, and keep to one side (this forms the ‘hat’)
Empty the contents of the tomato, all the juicy stuff into a bowl (save for bruschetta!) Fill tomatoes with stuffing, replace hats and drizzle with olive oil.
Cook at 200 degrees for 30-40 minutes or until tomatoes cooked. Serve with rice if extra hungry or alternatively with green salad seasoned with generous lemon juice.

- Tomatoes, with their high lycopene content (a red carotene) have been shown to be extremely protective against breast, colon, lung, skin, and prostate cancers. Lycopene helps prevent these diseases, and others, by neutralising harmful oxygen free radicals before they can do damage. (You can get up to 5 times more lycopene from tomato paste or juice, as the processing liberates more from the plans cells!)
- Eating a lycopene source with oil, such as olive oil, can also improve its absorption. One reason why the Mediterranean diet has so many healthful properties!
- Pork is an excellent source of protein, and an excellent source of B vitamins. Good quality sausages (outdoor reared, in straw, with a varied diet) can be enjoyed from time to time as part of a healthy, varied diet.
